    Owned by Gérard and Chantal Perse, Château Pavie covers a little less than 40 hectares at the heart of the Saint-Emilion Grand Cru appellation. There, Merlot, Cabernet Franc and Cabernet Sauvignon take everything that they need to produce wonderful grapes from limestone, clay and sand soils.

    Harvested by hand, the vines produce low yields and are the grapes are heavily sorted before vinification. Malolactic fermentation takes places in barrles where ageing also occurs for anytime from 18 months to 3 years with the proportion of new wood oscillating between 70 and 100%.

    “James Suckling” : The depth and intensity is really out of this world. The richness is there, but it’s all in balance and has an almost weightless feel to it. It’s medium- to full-bodied with purity and definition, and the magic of limestone soils keeps the pH low, giving energy, bright acidity and verve. Terrific young red. 51% merlot, 32% cabernet franc and 17% cabernet sauvignon.
