Description
Owned by Gérard and Chantal Perse, Château Pavie covers a little less than 40 hectares at the heart of the Saint-Emilion Grand Cru appellation. Here, Merlot, Cabernet Franc and Cabernet Sauvignon draw the nutrients they need to flourish from soils of limestone, clay and sand. Harvested by hand, the vines produce low yields and are the grapes are heavily sorted before vinification. Malolactic fermentation takes places in barrles where ageing also occurs for anytime from 18 months to 3 years with the proportion of new wood oscillating between 70 and 100%.
Vintage 2024 blend: 51% Merlot, 32% Cabernet Franc, 17% Cabernet Sauvignon.
Falstaff : “Deep dark ruby, opaque core, purple reflections, delicate edge brightening. Fine ripe heart cherry, a hint of cassis and plum, delicate notes of nougat and wood, a hint of orange zest underneath. Powerful, tightly meshed, ripe fruit, fine acidity, mineral, remains persistent, chalky nuances on the finish, sure maturity and certain ageing potential.”
