Description
The grand vin from Château Haut-Bailly is one of the most elegant from the whole Pessac-Léognan appellation. Its vines grow on 30 hectares which conatin sand, gravel and clay soils. Harvested by hand, the grapes are vinified by micro-plots in cement vats. The wine is aged for 16 to 18 months which at the end of time, is delicate, complex, balanced and made for cellaring.
iDealwine Primeur tasting note : “Initially subdued, the nose gradually opens up to reveal a velvety, peppery, floral (peony) bouquet of red and black fruit, gradually increasing in intensity to reveal elegant notes of graphite and pencil lead. On the palate, the velvety attack leads to a flavourful wine revealing a silky texture and crisp tannins. The ensemble is well balanced and structured by a woodiness that coats the aromatic bouquet with delicate vanilla notes. The intense finish combines spice, pepper and minerality with a mouthwatering burst of black fruit. Extremely elegant.”
