Pessac Leognan - Graves Cru Classé
Description
In Pessac-Léognan, the Domaine de Chevalier produces a beautiful white wine composed of Sauvignon Blanc and Semillon which draw the nutrients necessary for their development from gravel and clay soils, while benefiting from the influence of the surrounding forest. Harvested by hand, they are vinified in oak barrels containing a small proportion of new wood (30%, approximately) and are aged in barrels also used for one year or more. Thus, the wine is both lively and rich, made to keep well and to accompany dishes of character.
James Suckling : “This is layered and complex with an impressive mineral tension and depth. Medium- to full-bodied, very long and persistent. It has oyster shell, crushed stone and citrus peel character with racy acidity coming through, adding to its length and tension. Very long and firm at the end with a backbone of fine tannins for a white. 70% sauvignon blanc and 30% semillon.”
