Description
Sauvignon Blanc, Sauvignon Gris and Sémillon make up this fine white wine which is made for ageing. It puts on a show of flavours with yellow fruits, white flowers and citrus fruits introducing a palate that is both dense and taut, velvety and mineral. How is it made? Once harvested by hand, the grapes are fermented in French oak barrels and aged on their lees again in barrels (50% new wood), interupted by lee stiring.

It’s so complex and structured, offering a palate that feels similar to the texture of a red wine with a velvety tannin structure. There’s a lot going on here. Spice, crushed seashell and citrus blossom. Salty, too. Weightless and so long. 90% sauvignon blanc, 5% sauvignon gris and 5% semillon.”
