Description
You will find Château Canon, property of Chanel since 1996, on the top of Saint-Emilion’s limestone plateau. Their vines benefit from exposure to the south, south east and are cultivated parcel by parcel according to sustainable methods. In the cellar, the winemaking process is traditional and takes place in truncated, cone-shaped tanks. The wine is aged in barrels with the proportion of new oak reaching about 50%. In the glass, the red fruit notes mix with that of cocoa, introducing a silky and persistent mouth feel.
“James Suckling” : This is so elegant and sophisticated already, with a really electric presence and length that goes on and on. It’s medium- to full-bodied with an intensity of tannins. It remains weightless and energetic. The pH is 3.41, making this a vivid and lively wine. Currant, orange and stone. Sea salt, too. The limestone soils created a unique wine here in 2023. A blend of 71% merlot and 29% cabernet franc.
